Avocado toast is an all-time favorite when it comes to quick, nutritious breakfasts. It combines the benefits of whole grains, heart-healthy avocado, and a protein-rich egg to provide a balanced start to your day.

Ingredients:

  • 1 slice of whole-grain or sourdough bread

  • 1 ripe avocado

  • 1 egg

  • A pinch of salt

  • Freshly ground black pepper

  • A squeeze of lemon juice

  • Red chili flakes (optional)

Instructions:

  1. Toast Your Bread:
    Start by toasting your bread until it reaches your desired level of crunchiness. This provides a sturdy base that adds texture and flavor.

  2. Prepare the Avocado:
    Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it with a fork, and add a pinch of salt, a dash of pepper, and a squeeze of lemon juice to brighten the flavor and help prevent browning.

  3. Poach the Egg:
    Bring a small pot of water to a gentle simmer. Crack the egg into a small bowl or cup, then slowly slide it into the water. Poach the egg for about 3-4 minutes for a runny yolk (or longer if you prefer a firmer yolk). Remove the egg with a slotted spoon and set it on a paper towel briefly to remove extra water.

  4. Assemble and Serve:
